Porchetta

Porchetta sandwiches are incredible. We've done a porchetta on the BBQ before and it was good, but these sandwiches are the result of multi-generational families toiling over pork.

One sandwich we had this week was an experience in itself. After taking a ticket and waiting in line for about ten minutes, you're welcomed into a shop only large enough for two guests. There is no menu. You simply tell them what you'd like on your sandwich and every item is individually weighed at a market price. Every cut of bread, each scoop of pesto, every slice of succulant fatty pork.

Then you're sent off to enjoy your sandwich on the steps of whatever church is featured on that corner.
